TO MAKE THE TOPPING: In a medium sauté pan over medium heat, warm the olive oil. Add the onion and red pepper flakes, and cook, stirring occasionally, until the onion is tender, 4 to 5 minutes. Add the garlic and sage and cook for 1 minute more, stirring occasionally. Add the beans and vinegar and cook until the mixture comes to a simmer. Transfer to a food processor and process until smooth. Season with salt and pepper.
Grill the bread slices over Direct Medium heat until toasted, 2 to 3 minutes, turning once halfway through grilling time. Transfer to a platter. Spread some of the warm bean mixture on each piece of toast and sprinkle with a bit of parsley. Serve immediately.
