1. Place the dates in the water and let soak for 1 hour, or until soft. Reserving the water, drain the dates and set aside.
2. Place the walnuts in a food processor and pulse until they are a fine powder. Add the coconut, dates, and vanilla, and blend until completely combined. If necessary, add the reserved water 1 tablespoon at a time until the mixture has a cookie dough consistency.
3. Drop the dough by rounded teaspoons onto Teflex dehydrator sheets. Dehydrate at 105°F for 24 hours.
4. Remove from the dehydrator and serve warm, or refrigerate and serve cold at a later time.
