1. Cut the avocado in half and remove the seed. Discarding the shell, scoop out the flesh and place it in a food processor.
2. Add the remaining ingredients to the food processor and pulse until completely smooth. If necessary, add cool water 1 tablespoon at a time until the desired consistency is reached.
3. Use the dressing immediately, or transfer to a container and refrigerate until ready to use.
