OMG! Deli Reuben


Serves: 5

Yield: 1 sandwich

Ingredients

2 slices rye bread
4 teaspoons thousand island salad dressing
5 ounces sliced lean corned beef
1 to 2 slice Swiss cheese
3 tablespoons sauerkraut
1 tablespoon butter

Directions:

1. Spread one side of each slice of bread with half the Thousand Island dressing.
2. Place the sauerkraut on one slice, the corned beef and cheese on the other, then put them together to form a sandwich.
3. Melt the butter in a frying pan over medium heat. Add the sandwich and grill 2 minutes or until the bread is golden brown on the bottom. Flip and continue to cook another 2 minutes or until the bottom is golden brown.
4. Remove from the pan and serve immediately.

Important tip
If you don’t have Thousand Island dressing, you can make your own by mixing together:
1 tablespoon mayonnaise
1 teaspoon ketchup
1/2 teaspoon sweet pickle relish
