Ingredients

1 (16-ounce) package ziti (or rigatoni) noodles
4 quarts water
4 tablespoons olive oil, divided
1 onion, diced
1/2 green pepper, diced
10 mushrooms, quartered
4 cloves garlic, crushed
oregano, basil, and pepper to taste
1 yellow squash, quartered and sliced
2 (15-ounce) cans tomato sauce
1/2 block tofu, drained and squeezed
1 (8-ounce) carton ricotta cheese
1 (8-ounce) package grated mozzarella cheese, divided
4 ounces grated Cheddar cheese
1 tomato, sliced

Directions:

Boil noodles in water and 1 tablespoon olive oil until tender. Drain. In pan, sauté onion, green pepper, mushrooms, and garlic in 3 tablespoons olive oil. Spice to taste with oregano, basil, and pepper. Sauté until onions are tender. Add yellow squash and tomato sauce. Reduce heat and simmer.

In a large bowl, combine tofu, ricotta, and 1/2 the mozzarella. Add sauce mixture and noodles. Pour into 12-inch Dutch oven and sprinkle with remaining mozzarella and Cheddar. Top with tomato slices and sprinkle with additional oregano and basil. Bake in 350° oven for 45 minutes to 1 hour.


Fun Fact: Butch Cassidy, a.k.a. George Leroy Parker, purchased a ranch near Dubois, Wyoming, in 1890. This location is close to the notorious Hole-in-the-Wall, a natural geological formation that afforded outlaws much welcomed protection and cover, and so the suspicion has always existed that Parker's ranching, at which he was never economically successful, was in fact a façade that operated to conceal more clandestine activities. Cassidy, perhaps in conjunction with Hole-in-the-Wall outlaws, robbed the bank in Montpelier, Idaho, on August 13, 1896. He got away with $7,165, allegedly to hire a lawyer for his mentor Matt Warner, who was awaiting trial for murder in Ogden, Utah.
