Seafood-Rice Salad

Ingredients

Lemon Vinaigrette
2 pounds scallops, cooked
1 pound medium shrimp, cooked and cleaned
4 cups cooked rice
3 cups broccoli flowerets, cooked
2 (6-ounce) packages frozen crabmeat, thawed and drained
LEMON VINAIGRETTE
1/2 cup vegetable oil
1/2 cup lemon juice
2 tablespoons chopped fresh chives
1 tablespoon grated lemon peel
1 teaspoon Dijon style mustard
1 teaspoon sugar

Directions:

1. Prepare Lemon Vinaigrette.
2. Mix all ingredients in large bowl except Lemon Vinaigrette. Toss salad with Lemon Vinaigrette
