Line a broiler pan with aluminum foil and grease with 1 tablespoon butter. Place tomatoes in a single layer on the pan and season with salt and pepper. Mix the melted butter with the breadcrumbs and sprinkle over top. Broil 5–6 inches from the fl ame until golden brown, about 2–4 minutes, taking care not to burn. Combine the basil and parsley. Remove tomatoes from broiler and sprinkle with the herb blend.
