Ingredients

3 large acorn squash
1 pound ground beef
1/2 cup celery chopped
1 small green pepper chopped
1 small onion chopped
1/2 cup soy sauce
2 tablespoons brown sugar
1 (4-ounce) can sliced mushrooms
1 (10 3/4-ounce) can condensed cream of chicken soup
2 cups cooked rice

Directions:

Preheat oven to 375°F. Wash squash well; cut off top and remove seeds. In a large skillet, cook the beef, celery, green pepper, and onion until meat is browned and vegetables are ten-der; drain. Add all remaining ingredients and cook an additional 3 minutes, mixing well. Spoon filling into prepared squash and place them on a cookie sheet. Bake for 1 hour.
