Cowboy Caviar

Ingredients

2 (14-ounce) cans black beans, drained
1 green bell pepper, diced
1 medium onion, diced
1 (15-ounce) can yellow or white hominy, drained (substitute 1 bag grozen corn, thawed)
2 medium tomatoes, chopped
1 fresh jalapeƱo pepper, seeded and finely minced
4 green onions, chopped
1/4 cup fresh cilantro leaves, chopped
1 cup zesty Italian salad dressing (Italian my be used for less spice)

Directions:

Combine all ingredients in a medium bowl or zip-lock bag and toss to combine. Cover and chill 2 hours or longer before serving. Over night is best. Serve with tortilla chips.
