Hot German Potato Salad

Ingredients

1 1/2 to 2 pounds red potatoes, cooked and sliced about 1/4-inch thick
1 medium onion, chopped
6 to 8 strips bacon, cooked and crumbled
1/3 cup apple cider vinegar
2 tablespoons all purpose flour
1 teaspoon kosher salt
1/2 cup water
3 teaspoons xylitol or 1/2 teaspoon artificial sweetener (2 packets)
1/4 teaspoon fresh cracked black pepper
1/2 cup parsley, chopped (optional)

Directions:

In a 10-inch Dutch oven, fry bacon until crisp. Drain all but about 1 Tbs. bacon fat and add onion, cook until opaque, about 2 to 3 minutes. Add remaining ingredients but the sliced potatoes, stir well to combine and thickened. Remove from heat, add potatoes and stir in to combine. Serve warm.

*Xylitol is a sugar alcohol, sugar free, sweetener product sold under the brand name of "Miracle Sweet" although made from cane sugar it contains no sugar and has no calories. A word of caution use sparingly per serving, consumption of more than 50 mg or 5 tsp. per day has a laxative effect. I use Xylitol widely in sugar free baking as I find it does not bitter like Nutra-Sweet or Saccharin based artificial sweeteners. I also like it because it measures the same as regular table sugar in recipes, teaspoon for teaspoon.
