Italian Red Lentil Soup

Ingredients

1 tablespoon oil
1 medium onion, chopped
2 medium carrots, chopped
3 stalks celery, chopped
1 1/2 pounds ground turkey sweet Italian sausages, casings removed
6 1/4 cups chicken broth (3 14-ounce cans)
1 (14 1/2-ounce) can diced italian tomato
3 cups red lentils
1 cup wine
2 teaspoons basil
Parmesan cheese, grated

Directions:

Heat oil in a Dutch oven over medium high heat, stir in onions, celery, and carrots sauté about 5 minutes. Add sausage and break into small pieces cook 6 to 10 more minutes until browned. Stir in remaining ingredients but cheese and bring to a boil reduce heat, cover and simmer 1 hour, 15 minutes. Serve topped with parmesan cheese.
