One Messed up Omelet for 12

Ingredients

2 cups ham, diced or browned hamburger, sausage or bacon
2 cups onions, diced
2 cups green bell peppers, diced
2 cups mushrooms, sliced
2 dozens large eggs scrambled with 1/4 cup water
seasoned salt and pepper to taste
8 ounces shredded Cheddar cheese, jack, or any cheese you like
3 tablespoons butter

Directions:

In a 10” or larger Dutch oven, combine meat and vegetables with butter and sauté until heated through but slightly firm. Add eggs, salt and pepper. Stir together, cover and cook 5 to 10 minutes over medium heat. Remove cover and stir, top with cheese and cook 5 minutes more. Serve.
