Preheat a 16” Dutch oven over medium high heat. Meanwhile wash the potatoes and cut the larger potatoes in half to make a uniform size (large bite sized). Add oil and bacon fat into Dutch oven then add the potatoes. Fry potatoes 15 minutes stirring frequently to coat and keep from burning.
Add rosemary and herbs, stir to coat. Pour in water or broth and cover. Cook 35 to 40 minutes more, stirring occasionally or until potatoes are fork tender but not mushy.
