Catahoula Dirty Rice

Ingredients

3 onions, diced
2 bell peppers, diced
1 tablespoon chopped garlic
2 bunches green onions, diced
5 cups water, divided
1 quart canned whole tomato
1 pound smoked sausage, cut up
1 pound ground beef
1 medium-size chicken, cut in pieces
3 cups cooked rice
1 teaspoon salt
1 teaspoon peppers sauce or to taste

Directions:

Place onions, peppers, garlic, and green onions in large pot. Add 2 cups water and canned tomatoes. Cook approximately 45 minutes. Brown sausage and drain. In same pan, brown ground beef and drain. In separate pan, place a small amount of oil, (enough to cover bottom of pan) and brown lightly floured chicken pieces in oil. When brown, add 1 cup water and cook on low heat until chicken is tender (about 30 minutes.) Add sausage and ground beef to chicken and gravy. Add rice and meat to tomato mixture with remaining 2 cups of water. Cook about 45 minutes over medium-low heat. Add salt and pepper sauce. Freezes well, prepared in advance.
