In a small bowl, stir mayonnaise, honey, lemon juice and curry powder until blended.
Preheat broiler. To make each sandwich, spread toast with a scant 1 tablespoon of the mayonnaise mixture. Top with about 5 slices of apple, overlapping slightly if needed. Cover with cheese. Place open faced on a baking sheet.
Broil sandwiches 6 inches from heat source for 1 to 1 1/2 minutes or until cheese melts and just begins to turn golden.
To Microwave: Place two open-faced sandwiches at a time on a paper towel-lined microwavable plate. Microwave, uncovered, at 100% power for 45 seconds or until cheese melts.
