* This is a rich, smooth custard and should be served very cold. Scald cream in a double boiler. Beat egg yolks, gradually adding the granulated sugar. Slowly pour the cream over the egg mixture. Add vanilla. Pour into a 1-quart casserole (preferably a flat one). Place in a pan of hot water and bake uncovered at 325° until set. When the custard is set, sprinkle with sifted brown sugar. Place under broiler until sugar melts. Watch to be sure sugar doesn't burn. Chill.
