Peach Pudding

Ingredients

Peach Filling:
2 tablespoons cornstarch
1/4 cup brown sugar
4 peaches heaping sweetened, sliced fresh (sweeten with
1 tablespoon butter
1 tablespoon lemon juice

1 cup sugar
2 tablespoons butter
* Part two.
3 eggs beaten
1 cup flour
1 teaspoon baking powder
dash salt
3 tablespoons milk
1/2 teaspoon vanilla extract

Directions:

Mix the cornstarch and brown sugar. Add peaches. Cook and stir until thick. Add butter and lemon juice. Pour into 8-inch round baking dish and spread on topping (recipe follows). Serve with half and half cream.

*Pour this batter over the peach filling and spread as thinly as possible and bake at 350° until cake topping is brown. (About 30 minutes).
