Heat oven to 325° F. Grease a 1-quart casserole or soufflé dish. Sift together flour, baking powder, and salt. Beat sugar, eggs, and vanilla until pale and fluffy. Add flour mixture and blend well. Fold in apples and raisins. Spoon into prepared dish and bake 40 to 45 minutes. Pudding will resemble a soufflé, deflating soon after removal from oven. Serve warm with whipped cream or ice cream.
