Sausage And Mushroom Quiche

Ingredients

1 frozen pie crust 9-inch unbaked pastry shell
1 pound pork sausage bulk
1 pound mushrooms small whole
1/2 cup parsley minced
2 eggs
1 cup light cream or eavaporated milk
1/2 cup Parmesan cheese grated
1/4 teaspoon salt

Directions:

Crumble sausage in large skillet add mushrooms. Cook over high heat about 15 minutes, stirring frequently until meat and mushrooms are lightly browned and all liquid from mushrooms has evaporated. Drain off excess grease. Add parsley to the mushroom mixture.

Beat eggs with cream and cheese. Blend in the mushroom mixture. Stir in salt. Pour mixture into pastry shell, arranging mushrooms stem side down. Bake at 400° for 25 to 30 minutes or until crust is well browned and filling is set. Let pie stand about 10 minutes before cutting.
