Put zucchini, onions and peppers through food grinder or use food processor to obtain medium coarseness of vegetables. Sprinkle with 1/2 cup salt and let stand overnight. In the morning, drain and rinse well with cold water. Mix together the remaining ingredients. Bring to boil in large kettle. Add ground vegetables, then simmer for 30 minutes. Ladle into hot jars, leaving 1/2 inch headspace. Process in boiling water bath for 15 minutes.
Note: For high altitude, process 1 additional minute for each 1,000 feet above sea level.
