Caesar Dressing

Ingredients

1/4 cup fat-free cottage cheese
1 clove garlic, minced
2 tablespoons grated Parmesan cheese
2 tablespoons lemon juice
2 tablespoons lite mayonnaise
1 teaspoon anchovy paste (optional)
1/2 teaspoon Dijon style mustard

Directions:

In a food processor or blender, puree the cottage cheese and garlic until smooth. Add the Parmesan cheese, the lemon juice, mayonnaise, anchovy paste if using, and the mustard pulse until smooth. Let stand 10 minutes to allow flavors to blend.
