Zippy Potatoes


Serves: 4

Ingredients

4 medium potatoes, scrubbed but not peeled
1 to 2 onion (optional)
1 tablespoon reduced-calorie margarine
1/2 teaspoon garlic powder
1/2 teaspoon paprika
2 tablespoons Parmesan cheese

Directions:

1. Cut potatoes into long strips or bite-size pieces

2. Cut onion into eights.

3. Place vegetables in a shallow casserole or 8-inch square pan. Dot vegetables with margarine. Sprinkle with seasonings.

4. Cover with paper towel. Microwave on HIGH for 8-10 minutes, stirring occasionally.
