Place the largest foil plate you can find that will fit in the bottom of a 16-inch Dutch oven. Put a layer of tortilla chips on the tin plate. Add the meat and other garnishments putting the cheese on top. Place the lid on the Dutch and heat for about 15 minutes or until the cheese melts. Use about 20-25 briquets on top of the Dutch oven to quickly heat the nachos. Slide tin plate of nachos from the Dutch oven. Serve with sides of sour cream, salsa, and/or guacamole as an added treat. Preheat the oven while you build the nachos if you’re in a hurry.
