There are times when cooking in camp means cooking with canned and/or dried food. In l991, one of my rafting pards lucked out and drew a permit for the Grand Canyon. Our plan to cover the 226 miles over eighteen days necessitated planning meals beyond when grub, frozen in coolers, would last. Summer temperatures seem to hover in the upper 90’s on the Colorado River in June. In our "Cook for the Day" lottery, I drew days 3, 8, and 16.
Day 3’s menu featured all fresh ingredients and by using dry ice, I was able to use frozen items for Day 8. In planning my meals for Day 16, my only choices were dried and canned ingredients. Here is my dinner menu for Day 16!
