Sauté chicken with celery and onion in a nonstick skillet over medium-high heat. Stir in sherry, ginger, soy sauce, cornstarch, and sweet and sour sauce. Cool. Place teaspoonfuls in center of each wrapper. Fold to opposite corners and pinch edges together to seal. Place filled won tons on Pam-sprayed cookie sheet; spray won tons lightly with cooking spray. Bake at 375° about 10 minutes till brown. Serve warm.
