Waffles

Ingredients

3 eggs, separated
1/4 cup sugar, scant
1 3/4 cups milk
1/2 cup oil
2 cups GF Featherlight Mix
1 teaspoon xanthan gum
1/2 teaspoon salt
1 tablespoon baking powder

Directions:

Beat egg whites until foamy. Slowly add sugar and continue beating until the whites form soft peaks.

In a different bowl combine Featherlight mix, xanthan gum, salt and baking powder. Add egg yolks, milk, and oil. Beat well. Fold this batter into the egg whites, being careful not to deflate too much.

Bake on a hot waffle iron. Keep waffles in a warm oven (with the door cracked open) until you are ready to eat.

Any leftover waffles may be placed in Ziploc bags and frozen. They may then be reheated in the toaster or microwave.
