1. Cut the ginger into 1/4-inch slices, then combine with the pineapple, 3 tablespoons sugar, the lime juice, and water in a blender and process until smooth.
2. Strain this liquid into a pitcher, pressing the pulp against the strainer with the back of a spoon to extract all the juice. Correct the sweetness, adding more sugar, if desired, then pour into tall glasses over ice and serve immediately.
