1. Combine the peanut butter, 1/4 cup lime juice, 1/4 cup sweet soy sauce, and 2 teaspoons sambal ulek in a small bowl and whisk to mix.
2. Stir in the tomato, scallions, garlic, cilantro, coriander, salt, and pepper. Correct the seasoning, adding sambal ulek, lime juice, or sweet soy sauce as necessary. The sambal will keep, tightly covered in the refrigerator, for up to 1 week.
Makes about 1 1/4 cups enough to serve 4 to 6
