Onion Rings Valenciana

Ingredients

3 pounds large sweet white onions
3 cups sugar
1/2 cup white vinegar
1 teaspoon kosher salt

Directions:

Cut the onions into thin slices and separate into rings in a large bowl. Pour the sugar, vinegar and salt over the onions, mix well, cover and refrigerate for 24 hours. Chill and serve over sliced tomatoes.
