Cut tomatoes into large pieces. Heat oil in a large saucepan. Add tomatoes, garlic, carrots, celery, onion, basil, parsley and salt and pepper. Bring to a boil. Reduce heat to medium. Cook uncovered 30 to 40 minutes or until sauce reaches a medium-thick consistency. Taste and adjust for seasoning. Press everything through a food mill or puree in a food processor then pour back into saucepan. Cook 20 to 30 minutes longer. Makes 4-1/2 cups of sauce.
