Tomato sauce with bacon


Serves: 6

Ingredients

2 tablespoons olive oil
1/2 cup unsmoked lean bacon cut into matchsticks
1 small onion finely chopped
1 pound tomato fresh or canned chopped
1/4 teaspoon thyme leaves
salt and pepper to taste

Directions:

In a medium frying pan, heat the oil. Add the bacon and onion and cook over low heat until the onion is golden and the bacon is beginning to brown. Add the tomatoes, thyme, salt and pepper. Cover, and cook over medium heat for 10 to 15 minutes. Serve over cooked pasta.
