1 In the bowl of a food processor or heavy-duty stand mixer, stir together the dry ingredients. Gradually add water to make a stiff, nonsticky dough.
2 Turn the dough out onto a lightly floured surface. Knead until smooth, about 2 minutes.
3 Cover the dough with a bowl and let rest 30 minutes. Dust two large baking sheets with flour.
4 Cut the dough into 8 pieces. Work with one piece at a time, keeping the remaining pieces covered with an overturned bowl. On a lightly floured surface, roll one piece of the dough into a long rope about 1/2 inch thick. Shape the dough into cavatelli or orrecchiette, as described in the next recipe.
