Spray a nonstick skillet with nonfat cooking spray. Sauté onion 5–7 minutes or until golden. Add chicken and sauté 3–4 minutes or until chicken is browned. Stir in black beans, turmeric, cayenne, and pepper, and sauté 3–4 minutes. Reduce heat to medium low. Stir in half the scallions. Sauté 2–3 minutes until scallions are softened. Serve hot taco salad over lettuce. Top with remaining scallions, salsa, and sour cream.
Fun Fact: The Joshua tree is an unusual tree-like species found in high elevations (around 4,000 feet) of the desert Southwest, principally in parts of California, Arizona, Nevada, and Utah. Archaeological evidence indicates that the species dates back some two million years. Native Americans knew the Joshua Tree as a source of food and fiber, but early European settlers often thought it as grotesque and misshapen. However, the Mormons, trying to find their way back from California to Utah, used the Joshua Tree as a guide. They gave the plant its name in the early 19th century, because it reminded them of the biblical prophet Joshua, with his arms upraised in prayer. They saw this plant as a spiritual sign of welcome into the Promised Land.
