Mix pineapple, 1/2 cup water, and sugar. Boil remaining 1 cup water; add lime Jell-O to dissolve. Add pineapple mixture to Jell-O; chill and let set until wobbly. Add grated cheese and whipped cream and mix. Chill until set.
