Black Pepper Dressing:
Whisk ingredients together. Set aside.
Salad:
Wash spinach in cold water to remove dirt, and dry in a salad spinner. Discard stems; tear spinach leaves into bite-size pieces. Place in large bowl with other Salad ingredients except croutons.
Keep Salad, croutons, and Dressing separate until serving time. At serving time, toss Salad and croutons with Dressing.
