Cold Tomato Soup


Serves: 4

Ingredients

2 tablespoons olive oil
1 cup chopped onion
1 clove garlic, minced
1/4 teaspoon ground mace
2 tablespoons flour
3 cups hot chicken stock
2 pounds chopped ripe tomatoes
1/2 teaspoon sugar
1/2 cup sour cream
salt and pepper, to taste

Directions:

Simmer olive oil, onion, garlic, and mace about 5 minutes sprinkle onion mixture with flour. Cook while stirring 2 minutes. Whisk in chicken stock add tomatoes and sugar. Heat to boiling then reduce heat and simmer about 20 minutes. Cool and purée in blender pour through sieve into bowl. Whisk in sour cream. Add salt and pepper.
