Warm oil on high heat to 375 degrees in a soup pan.Mix together mashed potatoes, eggs, flour, cheese, and garlic salt until smooth. Place bread crumbs in a cereal bowl. Drop and roll balls of dough in bread crumbs.
Fry balls in hot oil 2–3 minutes, or until golden brown. Remove from oil with a slotted spatula or spoon and cool on a cooling rack.
Dip in ketchup or ranch dressing. Makes 4–6 servings.
