Peel and cut potatoes into 1/4-inch-thick strips. Warm oil on high heat to 375 degrees in deep fry cooker or deep soup pan. Cook a handful of sliced sweet potatoes at a time for 21/2–4 minutes, or until golden brown. Be sure the strips are completely covered by oil (this prevents sticking).
Remove potatoes from oil with a slotted spatula or spoon and place on a cooling rack to cool.* Dab potatoes with paper towels to remove excess oil. Sprinkle with powdered sugar, cinnamon and sugar, or salt. Makes 2–4 servings.
* Cooling racks that allow the oil to drip off work best. Place paper towels underneath to soak up excess oil.
