With or without skins, cut potatoes into 1/4-inch-thick strips.Warm oil on high heat to 375 degrees in deep fry cooker or deep soup pan. Place a handful of potato strips in a metal strainer. Place strainer with potatoes in hot oil 3–4 minutes. Be sure strips are completely covered by oil (this prevents sticking). Cool on a cooling rack.* Repeat until all potato strips are done.
Once the entire batch is complete, allow oil to reach full heat again, then place a handful of cooked fries back in oil for 30 seconds to 2 minutes to create a crisp outside. Cool on cooling rack and add salt. Repeat until done.
Dip fries in ketchup, barbecue sauce, or ranch dressing. Makes 4–6 servings.
* Cooling racks that allow the oil to drip off work best. Place paper towels underneath to soak up excess oil.
