Tropical Tuxedo

Ingredients

1/2 cup pineapple juice
1 teaspoon fresh lime juice
1/4 cup light coconut milk
3 tablespoons light rum
1 tablespoon honey
1/4 teaspoon vanilla extract
1 cup peeled and diced papaya (1 large)
1 cup sliced banana (1 large)
1 cup vanilla lowfat frozen yogurt

Directions:

Place the juices, coconut milk, rum, honey, vanilla, papaya, banana, and yogurt in a blender, and mix on low speed until the mixture is blended. Continue mixing, gradually increasing the speed, until the mixture is smooth. Pour into champagne flutes and garnish each by inserting a Pineapple Chip (see Garnishes with a Flourish) in the smoothie, if desired.
