Hawaiian Tropical Stuffing

Ingredients

1/2 cup butter or margarine
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup canned pineapple chunk undrained
1/4 cup minced fresh cilantro
1/2 cup coconut milk
3 cups seasoned stuffing mix
1/2 cup chopped macadamia nut
1/2 cup shredded coconut
1 egg lightly beaten

Directions:

1. Preheat the oven to 325°F. Lightly grease a 2-quart casserole dish and set aside.

2. Place the butter or margarine in a large skillet, and melt over medium heat. Add the celery, onion, pineapple, and cilantro, and sauté for about 5 minutes, or until the vegetables are soft.

3. Stir the coconut milk into the skillet mixture. Then stir in the stuffing mix, macadamia nuts, shredded coconut, and egg.

4. Transfer the stuffing to the prepared dish, cover, and bake for 20 to 30 minutes, or until heated through. If a crisp top is desired, uncover the dish and bake for 10 additional minutes.
