1. Preheat the oven to 350°F. Lightly spray a 2 1/2-quart casserole dish with nonstick cooking spray and set aside.
2. Place the stuffing mix in a medium-sized bowl and set aside.
3. Place the butter or margarine in a small skillet, and melt over medium heat. Add the onion and garlic and sauté for about 5 minutes, or until golden.
4. Pour the contents of the skillet, including the butter or margarine, over the stuffing mix. Stir until blended.
5. Layer the tomatoes and the stuffing mixture in the prepared casserole dish, beginning and ending with a layer of the stuffing mixture. Sprinkle each layer of tomatoes lightly with salt as you go. Bake uncovered for 35 to 40 minutes, or until brown and crusty on top.
