In a large bowl, mix together the egg, agave, oil, milk and vanilla. Mix the dry ingredients with the wet until it is well blended and smooth. Pour 2/3 of the batter on the bottom of a greased and floured 8X8 baking dish. Cover the batter with sliced apples that have been tossed with 1-2TBSP of agave and 1 tsp cinnamon. (I like to use 3 medium sized apples for this) Cover the apples with the rest of the batter. Bake at 350° for 20-25 minutes. Cake is ready when the top of the cake turns golden and when a toothpick inserted, comes out clean. Be careful not to over bake this cake or it becomes dry and crumbly.
