How to prepare instant tea

To prepare instant powdered tea or sweetened iced tea mixes, it's best to follow package directions, as the amount needed may vary by brand. However, as a general rule, you can follow these proportions:
To prepare hot tea using instant tea:
For one cup, use a level teaspoon instant tea to a teacup (about 5 ounces) of boiling water.

For a potful, use 2 level tablespoons instant tea for each quart of boiling water.

To prepare iced tea using instant tea:
For one glass, use a rounded teaspoon of instant tea for each 6 to 8 ounces of cold water.

For a pitcherful, use 2 rounded tablespoons for each quart of cold water.

How to make a tea concentrate:
Use this convenient method to make your own "instant" tea. It's especially handy for parties or whenever you're serving a crowd.

1. Heat a quart of cold tap water to a full rolling boil.

2. Pour over 2/3 cup loose tea. Cover let stand 5 minutes.

3. Stir and strain into a quart pitcher or teapot. Keep at room temperature and use within 2 hours do not refrigerate.

4. To serve, pour 2 tablespoons of concentrate into a cup and fill with hot water.
