Ham and Asparagus Rolls

Ingredients

12 medium asparagus spears
1 1/2 cups grated Havarti or Swiss cheese
1 cup flour divided
1/4 teaspoon nutmeg
6 slices (1/8 inch thick) ham
2 cups cooked rice
1 large egg mixed with 1 tablespoon water
1 cup panko or bread crumbs

Directions:

Turn toaster oven to convection bake at 400 degrees (or bake at 425 degrees).

Place asparagus on a plate, cover with plastic wrap, and microwave for about 1 minute, or until fork tender.

Toss cheese with 1?2 tablespoon flour and nutmeg. Lay the ham slices on a flat surface. Place 2 asparagus stalks lengthwise on each ham slice with a little of the cheese mixture. Spread 1?3 cup rice on top of each, and then roll ham slices up, beginning with short end. Roll the ham rolls first in flour, then in egg wash, then in panko or breadcrumbs. Bake on a baking sheet prepared with nonstick cooking spray for 5–8 minutes, or until browned. Makes 6 servings.
