Turn toaster oven to bake at 400 degrees.
Squeeze the spinach dry with a kitchen towel. Lay the pie crust on a flat surface. Spread spinach evenly over top, leaving 2 inches around edge of crust bare. Sprinkle garlic and feta over top. Bring edge of crust up over spinach mixture, forming a crust about 1 inch deep all around. Crack one of the eggs and mix together with 1 tablespoon water. Brush crust edge with egg mixture. Mix together the remainder of the egg mixture, remaining eggs, half-and-half, salt, and nutmeg. Pour over spinach mixture. Bake for 30–35 minutes, or until filling is set and crust is golden brown. Serve immediately. Makes 4–6 servings.
