12 hours before cooking, rub roast with pork seasoning.
Take apple juice and simmer until liquid is reduced by half. To make the concentrate.
Let roast stand at room temp. for at least one half hour before cooking.
In a deep Dutch oven put in roast, half of apple concentrate, thyme and rosemary.
Cover the top bones and cook at medium heat for 1 1/2 hours.
Baste with the liquid as needed, add extra apple concentrate.
When cooked stuff the roast with stuffing, garnish with asparagus and have at it.
Bone tips may be wrapped in bacon for presentation purposes.
