Season chicken with salt, lemon pepper and garlic.
Brown chicken in a Dutch oven or stock pot with a small amount of cooking oil over medium heat.
Remove chicken then add butter, broth, honey and parsley to the pot, mix well.
Add potatoes and toss to coat. You may want to add more salt, lemon pepper and garlic at this time.
Lay chicken on top of potatoes, cover and cook at low heat for 20 to 30 minutes.
Stir occasionally during cooking. You may need to add more broth.
To serve, spoon broth over potatoes and chicken.
