1. Prepare the chile sauce. Set aside off heat. Then, in a small skillet, heat the oil over medium heat and cook the tomatoes, stirring, until the juices bubble, 2 to 3 minutes. Stir in the chile sauce and heat through.
2. In a medium skillet, heat 1/3 cup of oil, until hot. Using tongs, dip tortillas, 1 at a time, in the oil until pliable and hot, about 3 seconds. Stack the tortillas on paper towels.
3. Dip the tortillas, one at a time, in the warm sauce just to coat both sides. Fold each into quarters to a triangle shape. Place 2 on each of 4 serving plates. Pour the remaining heated sauce over the tortillas and top each equally with the onions and cheese. Serve at once.
