Rinse the zucchini and pat dry. Trim off the ends. Thinly slice lengthwise. Brush both sides with oil. Heat a grill pan over medium heat until hot enough to make a few drops of water sizzle. Lay the zucchini slices on the pan. Season with salt and pepper, and cook until grill marks appear on the bottom, about 3 minutes. Turn and cook until crisp-tender and still bright green around the edges. Arrange the zucchini on a serving plate. Serve hot or warm.
